This nutritious cake features grated carrots and coconut, combined with oats and honey for natural sweetness. It is simple to make and bakes in about 30 minutes, yielding a cake that’s perfect for sharing during celebrations or as a reward for good behavior.
Ingredients
- 1 cup grated carrots
- 1/2 cup unsweetened shredded coconut
- 1 cup whole wheat flour or oat flour
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a cake pan or line it with parchment paper.
