Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 cup canned pumpkin puree
  • 1/2 cup plain yogurt
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1/4 cup coconut oil melted
  • 1 cup Greek yogurt for frosting
  • 1 tablespoon peanut butter (optional for flavor)
  • Carob chips or dog-safe decorations for topping (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 6-inch round cake pans.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and cinnamon.
  3. Combine Wet Ingredients: In another bowl, mix pumpkin puree, yogurt, honey or maple syrup, egg, and melted coconut oil until combined.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Bake the Cake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let it cool in pans for 10 minutes before transferring to a wire rack.
  6. Prepare the Frosting: In a bowl, mix Greek yogurt and peanut butter until smooth for the frosting.
  7. Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top and frost the top and sides of the cake.
  8. Decorate: If desired, add carob chips or dog-safe decorations on top for added flair.
  9. Serve: Slice into pieces suitable for your dog and share during celebrations.
