Ingredients

  • 1 cup cooked and mashed sweet potato
  • 1 cup finely chopped kale, stems removed
  • 2 cups whole wheat flour (or gluten-free flour)
  • 1/2 cup rolled oats
  • 1/4 cup peanut butter (unsweetened)
  • 1/4 cup vegetable broth (low sodium)
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed sweet potato, chopped kale, peanut butter, vegetable broth, and egg. Mix until well combined.
  3. Gradually add the whole wheat flour and rolled oats to the mixture, stirring until a dough forms.
  4. Roll out the dough on a floured surface to about 1/4 inch thick. Use cookie cutters to cut out shapes.
  5. Place the treats on the prepared baking sheet and bake for 25-30 minutes, or until they are golden brown and firm.
