Chicken & Cottage Cheese Cake With Creamy Goodness

I made this chicken and cottage cheese cake for my dog Milo’s birthday last month. The cottage cheese made the cake creamy, and he ate the first piece without hesitation.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup cottage cheese
  • 1 cup whole wheat flour
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup chicken broth (low sodium)
  • 1/4 cup finely chopped carrots (optional)
  • 1 teaspoon baking powder

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. Mix Ingredients: In a large bowl, combine the shredded chicken, cottage cheese, whole wheat flour, vegetable oil, egg, chicken broth, and baking powder. If using carrots, add them in at this stage.
  3. Blend Until Smooth: Mix until all ingredients are well combined and form a batter.
  4. Pour Batter: Transfer the mixture into the prepared cake pan and spread evenly.
  5. Bake: Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool Down: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
