Bacon & Pumpkin Cake Packed With Tail-Wagging Flavor

I baked this bacon and pumpkin cake for my dog Oliver’s birthday last weekend. The bacon and pumpkin made the cake savory-sweet, and he ate the first piece without hesitation.

This delightful cake features a moist pumpkin base enriched with crispy bacon, providing a flavorful treat that’s perfect for birthdays or just because. Preparation and baking time combined takes around 1 hour, and it serves 8 happy pups.

Ingredients

  • 1 cup pure pumpkin puree (not pumpkin pie filling)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 cup cooked bacon, chopped
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup low-fat yogurt (for frosting, optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Mix Wet Ingredients: In a large bowl, mix together the pumpkin puree, applesauce, oil, and eggs until smooth.
  3. Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, baking powder, and cinnamon, if using.
  4. Mix Together: Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Fold in the chopped bacon.
  5. Bake the Cake: Pour the batter into the prepared cake pan and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool and Frost: Allow the cake to cool completely in the pan, then remove and transfer it to a wire rack. If desired, top with low-fat yogurt as a frosting.
  7. Serve: Slice the cake into appropriate portions for your dog and enjoy watching them indulge!

I store the cake in an airtight container in the fridge for up to two days since bacon spoils quickly. Oliver gets a small slice as a treat, and the cake usually lasts us two days.
