Ingredients

  • 1 cup duck liver, cooked and pureed
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup chicken broth
  • 1 tablespoon honey (optional)
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • Carob chips or peanut butter for frosting (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Mix Wet Ingredients: In a large bowl, combine the pureed duck liver, apple sauce, chicken broth, honey, and eggs, mixing until smooth.
  3. Combine Dry Ingredients: In another bowl, whisk together the whole wheat flour, rolled oats, and baking powder.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until fully blended.
  5. Bake: Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Frost: Allow the cake to cool completely before frosting with carob chips or peanut butter, if desired.
