Homemade Peanut Butter Pumpkin Layer Cake
This cake is made with pumpkin puree and peanut butter, layered between creamy, pet-safe frosting. It’s an excellent choice for celebrating your dog’s birthday or just to show them some love. This recipe takes about 90 minutes to prepare and bake, and it serves multiple canine friends.
Ingredients
- 1 cup pumpkin puree (not pumpkin pie filling)
- 1 cup natural peanut butter
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup unsweetened applesauce
- 1/2 cup water
- 1/4 cup honey (optional)
- 1/2 cup plain yogurt for frosting
- 1/4 cup peanut butter for frosting
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Mix Dry Ingredients: In a bowl, combine the whole wheat flour, baking powder, and baking soda.
- Combine Wet Ingredients: In another bowl, mix the pumpkin puree, peanut butter, applesauce, water, and honey until well combined.
- Combine Mixtures: Gradually add the dry ingredients into the wet mixture and stir until combined.
- Bake the Cake: Divide the batter evenly between the two prepared pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool: Allow the cakes to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
- Make the Frosting: In a bowl, mix the plain yogurt and peanut butter until smooth.
- Assemble: Once the cakes are cool, spread a layer of frosting on top of one cake, place the second cake on top, and frost the top and sides.
